Raspberry Maple Compote

With only a few raspberries left on the market shelves, I thought I would quickly post this recipe for the few of you that are lucky to still find these tasty berries. If you're not so lucky, remember, it is peach season;)



Raspberry Maple Syrup Compote
2 cups raspberries (or peaches, skin on and chopped)
1/4 cup of maple syrup
1 tbsp of lemon zest
1 tbsp of fresh lemon juice
1 tsp cinnamon


1. Place berries, maple syrup and cinnamon in a saucepan and cook over medium
    heat. Reduce heat and simmer until berries are softened, 3 to 5 minutes. 
2. Remove from heat and add lemon juice and lemon zest. 
3. Let it cool down.
4. Serve with your favourite yogurt and sprinkle some delicious granola on top!
