Without fail, my nemesis, a.k.a sweet tooth, kicked in shortly after dinner. It is a sizzling summer night and the ice cream truck is taunting me with its tempting tune. I want ice cream…bad!
Instead of skipping like I’m 5 years old again towards the big white truck playing its o’so familiar tune, I dug into my repertoire of recipes. I can’t remember where I got this one from but I am very thankful for who ever posted it!
Dairy-free & Sugar-free Ice Cream
1 banana, frozen
1 handful berries (blueberry, raspberry, strawberry), frozen
1 tbsp tahini
½ tsp vanilla
1-2 tbsp rice or almond milk
Put all ingredients in food processor. Blend until smooth. Serve immediately topped with berries or freeze for later.
Hi Kimmy! This sounds perfect ... I'm going to try it tonight and see if the kids will like it too! Another dessert that I've been making lately (when I crave chocolate) is a pudding .... for one person, 1/4 avocado, 1/4 or more banana, a sprinkling of water and some carob or cacoa powder - mix all in blender and eat right away .. it's delicious!
